Fall Food

I am so excited. Wanna know why? It’s Fall! Pumpkins. Sweaters. Corn mazes. Cider. I love every single thing about Fall except one… Eating. Eating healthy is SO much easier in the summer. Am I the only one who feels this way? Who wants to eat salads or grilled chicken when it’s cold outside? It’s Fall! It’s chilly! I want warm rolls and chicken pot pie and mashed potatoes. I want it to feel like Fall. It’s been my struggle every single year. But you know what? Not this year.  This year I’ve found a secret weapon that make me feel super festive AND healthy. Soup.Soup is a win-win-win. It totally puts me in the Fall spirit, it’s definitely a comfort food, and it’s super healthy (if you do it right). So to help you out, I’m sharing my go-to recipe for creamy butternut squash soup—super yummy and cozy and healthy.

BUTTERNUT SQUASH SOUP½ butternut squash¾ c chicken broth1 T onion flakes or ½ tsp onion powder¼ tsp nutmeg¼ tsp garlic powderpinch Italian seasoning1 drop cardamom essential oil1 drop cinnamon bark essential oilsalt and pepper to taste In a medium saucepan, boil 1-2 c water. Remove seeds from squash and cut into large chunks. Boil until soft. Drain water into a container and set aside. Using a fork and a knife, peel skin off the squash add to blender. Add remaining ingredients and blend until smooth. Add enough drained water to achieve desired consistency.I’ve felt so festive this week cuddling up and eating (drinking?) my soup. Try it out!
